Raspberry Muffins


These soft delicious buttermilk muffins are great for lunch, dinner or breakfast

MAKES 12

Ingredients
300g flour
1 tbsp baking powder
115g sugar
1 egg beaten
250 ml/1 cup buttermilk/  (see buttermilk substitutes)
4tbsp sunflower oil
1 cup/150g raspberries/ you can use frozen

 Preheat oven to 200c
arrange paper cases in a muffin tin that holds 12\sift flour and baking powder into a large bowl, stir in sugar, then make a well in the centre of the mixture

Mix the egg, buttermilk and sunflower oil together in a small bowl. Pour into the flour mixture, and combine quickly until just combined. Do not over mix\

 Add raspberries and lightly fold in with a metal spoon. Spoon the mixture into the paper cases

 bake for 20-25 minutes or until golden brown and firm in the centre, then transfer to a wire rack and serve warm or cold.
